Sheet Pan Fajitas

National Fajita DayNational Fajita Day is celebrated on August 18. Yes, a whole day is set aside to honor this delicious Tex-Mex favorite! Fajitas are easy to prepare and versatile since each person at the table can pile on the toppings of their choice.

Kids love helping too—whether it’s during meal prep, setting the table, or just assembling their own fajita. By offering a variety of toppings, children might also be inspired to try something new or sneak in a bite of something they might otherwise avoid.

Try this simple 30-minute sheet pan recipe for making fajitas at home!

Sheet Pan Fajitas, Serves 4-6

Ingredients:

1 lb. chicken tenders, cut into thin strips
1 red onion, thinly sliced
1 green pepper, thinly sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
2 Tbsp. olive oil
1 Tbsp. chili powder
1 Tbsp. cumin
1 tsp. garlic powder
1 tsp. paprika
1 tsp. oregano
1 tsp. onion powder

Directions:

  1. Preheat the oven to 400 degrees.
  2. Place chicken, peppers, and onion on a sheet pan in a single layer.
  3. Drizzle with olive oil.
  4. Mix all the spices together. Sprinkle it over meat and veggies. Toss to coat evenly.
  5. Bake for 10 minutes. Stir the mixture and bake for 5 additional minutes.
  6. To finish, broil on high for 2 to 3 minutes to add a little crispiness.

Serve with whole grain flour tortillas and your favorite toppings! We’ve included some suggestions for you to try below. Leftovers can be used in a fajita taco salad or rice bowl. Enjoy!
